Squeak.
Audible signature when bitten at room temperature. Direct indicator of freshness and protein structure integrity.
Evaluative reviews of cheese curd products from recognized Wisconsin makers. Each review covers what the product actually is, who makes it, what to expect on opening, and what it is best used for.
No maker pays for review placement. Reviews are written based on verifiable product specs, public ingredient lists, packaging information, and the editorial assessment of the maker's operation. We do not pretend to evaluate every individual batch. We do evaluate the product as a category and as it consistently arrives to consumers.

Springiness, density, jaw-feel. The structural property that distinguishes fresh curd from young cheddar.
Salt balance, milk character, finish. For flavored varieties: integration of flavoring with base cheese.
Batch-to-batch reliability. The hardest score to assign, derived from operational history and Standard compliance.

The benchmark. The Cheese Curd Capital of Wisconsin produces what most cheesemakers in the state would call the reference curd. Bright squeak, balanced flavor, consistent batch quality.
Decatur Dairy · Brodhead, WI · Recognized Tier
Steve Stettler is the only Wisconsin Master Cheesemaker certified in cheese curds. His garlic-dill flavored curd won the World Championship in both 2022 and 2024. The flavor is restrained, the curd structure is exceptional.
The Squeak Test is editorial assessment, not laboratory testing. We do not pretend to evaluate every individual batch a maker produces. We evaluate the product as it consistently arrives to consumers across multiple purchases over time, combined with verifiable specs about the maker's operation, ingredients, supply chain, and packaging practices.
The reviews assume the product is being eaten fresh. A score reflects the product at its peak, within the seven-day window from make date. A curd that scores 9.4 fresh will not score 9.4 if you eat it on day 14. The Standard exists precisely because freshness windows matter; the reviews honor that by scoring at peak rather than averaging across the entire shelf life.
No maker pays for review placement. Recognized makers do not get automatic positive reviews. Non-recognized makers are not reviewed (the verification framework that supports the Standard is also what supports the reviews). The list of reviewed products grows as the editorial team works through the directory; it is not pay-to-play and it does not aim to be comprehensive.
Fourteen Wisconsin cheesemakers currently meet the Standard. Every product in the Squeak Test comes from a maker in the featured curd directory.
