About this site.

Real Wisconsin Cheese Curds is an independent editorial on cheese curd brands & manufacturers. We exist because the conversation about Wisconsin cheese curds had become unrecognizable to anyone paying attention to what's actually in the bag. Food bloggers writing about "Wisconsin-style" curds in Phoenix. National food magazines treating production location as a footnote. Grocery-store buyers ranking curds on shelf life rather than freshness.

We maintain a public list of cheese curd brands worth ordering & explain, in writing, what a brand has to do to earn or keep its place on it. The Standard is the document that explains what real means. The list is the working document of which brands meet it. This page is what we are.

The Mission

Why we built this.

Wisconsin has been producing cheese since the 1840s & cheese curds since the 1850s. None of that history is reflected in how Wisconsin cheese curds are marketed & described in the broader food media today.

What's reflected instead are marketing adjectives like "artisan," "farmstead," "craft," & "Wisconsin-style." These adjectives have no legal definitions. They're used freely by industrial co-packers & family operations alike. The result is that a brand spending ten years building a real production operation in Wisconsin shares label adjectives with an Iowa co-packing facility that has never employed anyone who has touched the curd directly.

This site exists to draw the structural distinction. The Standard is six pillars, all verifiable, all falsifiable. We're not the only voice that could do this work. We're the one that has chosen to do it — with a published methodology that anyone can audit & a list that changes when brands earn or lose their place on it.

How we operate

How this works.

Real Wisconsin Cheese Curds is produced by a small editorial team. We don't publish individual bios because the editorial work is collective & ongoing. What we publish is editorially attributable to the operation as a whole.

editorial review

Our methodology involves documentary verification, on-site visits to production facilities, & consultation with subject-matter experts when their expertise informs a specific question. Recognition decisions involve documentary review & verification of operations in person.

We choose not to put names on individual essays or recognition decisions. The work is institutional, the methodology is documented, & the operation as a whole is accountable for what we publish. If you have questions about a specific position, recognition, or essay, our contact page lists the right paths for inquiry.

Editorial independence

How we stay independent.

Recognition is not for sale. No brand has ever paid us for recognition. No brand pays us for inclusion in the recommended list. There are no application fees, no annual dues, no advertising opportunities sold to recognized brands, no sponsored content slots.

No affiliate links, ever. None of the brand links on this site pay us a commission. We don't run amazon affiliate codes, we don't run share-a-sale, we don't take ad placements from the brands we cover. The list changes based on what brands are actually shipping — not who's paying.

If a brand earns its place on the recommended list, that's editorial. If a brand loses it, that's editorial too. We publish the reasoning either way in Cut the Cheese, the editorial column where the list changes are explained on the record.

How the recommended list works

The recognition process.

A Wisconsin cheese curd brand or producer that believes their operation meets the six pillars can apply for recognition. Every application moves through the same documented review process.

Apply

Contact us & submit production records, ingredient lists, milk-supply confirmation, & sample packaging showing make-date disclosure.

Review

We review the documentation & verify the submitted materials against the six pillars of the Standard.

Visit

If the documentary review passes, we visit the production facility & verify operations in person.

Recognized

If the visit confirms the documentation, the brand joins the recommended list & is granted use of the Real Wisconsin Cheese Curd badge on packaging & its website.

Recognition is ongoing

Recognition is editorial & the list is reviewed continuously. If a brand stops meeting the pillars, recognition can be withdrawn & the brand comes off the list whether it has been recognized for a month or a decade.
